Smores Fudge Brownies

I think it’s time to tell you why I NEVER wear yoga pants to the grocery store.

Many years ago, still vivid in my memory, I hurried into the grocery store to pick up a few things I had missed while planning for dinner. By my side was my 3 year old, who is the definition of idle. {Seriously, look it up in the dictionary. You will see his picture.} I rushed around the perimeter, grabbing things as we walked, filling my arms and hands until they were no longer free. As I turned towards the cash registers, I noticed T wasn’t by my side. He was a few aisles back, meandering around the bakery, surely distracted by the sprinkles and smell of fresh donuts. I called to him to hurry up and stay close. He listened and came running.

And then it happened.

He approached me, running, with arms extended. About a foot shy, he tripped and grasped for something to catch his fall. The heroine: my elastic waistband. He pulled that thing straight to the ground. When I felt my pants start to drop, the first thing that came to mind was to cover my lady parts. If showing your great white rear to the masses is inappropriate, then showing your nether-regions is a crime. Instead of dropping the milk and groceries to completely save my dignity, I folded forward and flashed the 5pm grocery rush crowd a full bright January white moon. I swear it took five whole minutes for the signal from my brain to reach my hands and arms before I dropped the goods to lift my waistband.

Then I did what every self respecting girl would do. I pulled up my yoga pants, picked the groceries up off the floor, and stood amongst the crowd that had witnessed my indecency and pretended like it never happened. I’m sure they will never forget. I can’t! I probably gave them nightmares. But please don’t worry friends, if you get caught with your pants down at the grocery store, you’ll feel better knowing you can avoid a trip back by making a plate full of these fudgy, rich chocolaty brownies with ingredients from your pantry.

Smores Fudge Brownies

  • 2 cups sugar
  • 1 1/2 sticks melted butter
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup unsweetened cocoa powder; splurge on the good stuff for these brownies
  • 1 cup flour
  • 1 cup Smores Snack Mix

Preheat oven to 350 degrees. Coat a 9×9 inch pan with cooking spray and line with parchment paper. Set aside.

Heat the butter in a small saucepan until JUST melted. In the bowl of a stand mixer, place the sugar, salt, and butter and mix until combined. Allow to cool for 5 minutes. Then, on medium speed, add eggs, one at a time, until combined. With the mixer on low, slowly add the cocoa powder, one spoonful at a time. Then add the flour, and 1/2 cup of the Smores Snack Mix.

Using a spatula, spread the batter in the prepared pan. Sprinkle with the remaining snack mix and bake 25-30 minutes, or until just set. Let cool.

Note: Smores Snack mix is made up of Golden Grahams, semi-sweet chips, white chocolate chips, and mini-marshmallows (the hard kind you find in a shaker).
