Grilled Chicken Caprese Pizza


So the cooking class has paid off!
This magical pan and perhaps the chef made some pizzeria magic right on my very own grill. And it was oh so good. Just a handful of ingredients and about 8 minutes is all it took!

Let's get out of the kitchen, grab yourself a beer, and man the grill tonight!

You will need:
Trader Joes' pre-made pizza dough, rolled out according to package instructions
{A GREAT VALUE - only $1.99! Bonus...I don't have to fuss with yeast.}
olive oil
dried oregano
grilled chicken breast, chopped
fresh mozzarella, diced into small cubes
fresh from the vine tomato, thinly sliced, guts removed
freshly torn basil, chiffonade
thinly sliced red onion, if you please


{The grill pizza pan that I bought and am using is made by NordicWare.}
Preheat your propane grill to 425 degrees.

Place your dough onto your grill-safe pizza pan. Brush lightly with olive oil and oregano. Add diced tomato slices, diced chicken, and cubed mozzarella. Place pan directly onto grill grates.


Halfway, or about 4 minutes, top with the red onion and close lid immediately. 
Be quick so as to not let much heat escape!


When the pizza crust is starting to brown and crisp on the edges, it's time to turn off the grill. Let the pizza sit for another minute or two with the lid closed to further melt the cheese. Then open the lid and sprinkle on your basil pieces. Use caution when you remove the pan {Use oven mitts; it will be HOT!}

Slice into eight wedges with a pizza cutter and be sure to share with your friends!

COOKING NOTE: Remember that grills VARY. You will need to play around with the temperature of your grill. If the bottom of the pizza gets browned too quick, you can turn off a couple burners and use indirect heat to finish the pizza, or you can finish in the oven using the broil function of your oven.
