French Toast Sticks {Eat Now, or Freeze For Later!}


Our house functions on a non-schedule kind of schedule in the summer. Since we don't really have to be out the door for anything on most days, we sometimes lie around in our pajamas well into the morning. One of my favorite things about this is we can look past cereal and oatmeal for our morning breakfast! 

This past year, my son begged for hot lunch each day. And since I'm a home cooking from scratch kind of gal, the thought of that makes me cringe. But 1) I am human and run late many mornings, which sometimes results in a cafeteria lunch, and 2) I want him to be able to go through the hot lunch line every once in awhile with his friends so feels human. So each month, we take a peek at the menu and compromise on certain days. One of his favorites is french toast sticks. But, here's how I'm guessing they are made:

1) Remove large brown bag from freezer.
2) Cut big brown bag.
3) Dump french toast sticks from big brown bag.
4) Heat {processed} french toast sticks in oven.
5) Serve.

Here at home, I can make them from scratch. They are simple, healthy {protein and whole grains!}, and unprocessed - which makes me a happy camper. Here's what you will need:

whole grain bread, cut into two inch slices
butter {for skillet}
eggs
vanilla
cinnamon
powdered sugar & pure maple syrup for serving


Use a 1:1 ratio, egg to slice of bread. I made 4 pieces of bread {about 16 french toast strips} by whisking four eggs with 1/2 tsp vanilla and a sprinkling of cinnamon. Heat a large skillet over medium heat and butter {or spray with olive oil} the pan. Dredge the bread slices on all sides and place into the pan. Cook a few minutes on each side, using tongs to cook all edges. Repeat with remaining bread slices.

Serve with hot pure maple syrup and sprinkle with powdered sugar.

Make Some Now and Freeze More For Later!!!
Make extra french toast sticks using the same method and lay flat onto a baking sheet to freeze. Place in a freezer safe resealable Ziploc bag. On those busy mornings, take out how ever many you want to make and pop them into the toaster. Serve in the same manner, minus all of the dishes and cooking!

    That in itself is enough to inspire me to try this out...perfect that they can be frozen!

  2. I'm SO doing this. As a kid, my grandma would take us to Carl's Jr nearly every morning before school for breakfast and we always ordered the French toast sticks (thank goodness I was an active kid!!). These bring back those memories but look MUCH better!

  3. I love that you can prepare something homemade that can also be frozen for future breakfasts. I hope you don't get sick of hearing this but your pictures are magazine worthy. How about I send you my crafts and you start to photograph them for me :)

  4. Great idea! I'm hesitant to make french toast - it seems like SO MUCH WORK for a tiny little meal, and since it would be just the kids eating, it would be merely two slices of bread. I do like the idea however of making enough for several breakfasts. A little bit of work now saves MUCH work later!

  5. I freeze pancakes a lot and pop them in the toaster but hadn't tried french toast. Now I will!
