Dessert to Pass {When the Kids Outnumber the Adults}


Our good college friends just moved into a new place with a large front porch. And if you didn't already know, a large front {preferably wrap around} porch is a NEED MUST-HAVE in my someday permanent house, and our friends feel the same way. There's something all cozy and lazy and wonderful about them.
It's pure nostalgia.

We were so excited to head on over, check out their place, and catch up while the kids played. They were making an amazing dinner of bruschetta chicken on the grill so I offered to bring along a dessert to share. Which I did. But I didn't end up getting to bring and share it. 

See, I spent the entire day cleaning and dismantling my kitchen table for it's facelift, and didn't leave myself much time for my sweet treat to firm up in the icebox. So one quick stop to the local store later, we had store-bought cookies in their original plastic store containers. {GASP!} Really, I don't really think they minded, but I'm still a little sad we didn't get to share these easy kid-and-adult-pleasing sprinkle ice cream sandwich treats!

When the kid guests outnumber the adult guests, I like to make these cute little sprinkle ice cream sandwiches to bring as my dessert to pass. Just cookies, ice cream, and sprinkles {ahem, an overnight nap for them in the freezer} is all you need! Just smear a little softened ice cream onto one cookie, top it with another, and roll in some sprinkles {or whatever you like!} Freeze overnight to set, or you'll be serving a sloppy sprinkle, cookie, & vanilla soup...which...doesn't actually sound too bad ;)
