FINALLY! The third installment of the Tomatillo Burrito meal trio!!! This one is my favorite. Adding just one more ingredient gives us a spicy burrito soup!
You will need:
Tomatillo Burrito filling
Chicken stock {one cup of stock per 1/2 cup filling, adjust to taste}
Shredded cheese
Diced avocado
Sour cream
Tortilla chips
For approximately every 1/2 cup of filling {eyeballing it}, add one cup of chicken stock to a large saucepan. Bring the mixture to a simmer for a few minutes. Remove from heat. Top with cheese, avocado, and sour cream. Crumble in some tortilla chips to give it a little crunch! {not pictured}
