Tastes Like {Rotisserie} Chicken!


I love rotisserie chicken as much as the next person. In fact, so much that I admit that I eat half the bird while I clean the meat off the skeleton. Yup, that's right people...the skeleton. That's the gross part for me. I LOVE the chicken, but hate picking it off of the bones. And I hate the chicken that gets under my fingernails and makes my fingernails feel weird. But clearly my love for rotisserie outweighs the chicken peeves. 

After making chicken for the CROCKPOT Rosemary Chicken & Creamy Lemon Sauce, I decided to cook another package of chicken using the same method, but this time with just salt, pepper, & garlic. Fast forward four hours....chicken that tastes like rotisserie's cousin! My house smelled amazing and the chicken even better. 

The best part? YOU control the salt! I know that's the best part of the store-bought rotisserie chicken {and is probably the reason I buy it all the time}, but not everyone can enjoy them with the salt content being what it is. But this is a great alternative that will give you moist & seasoned wannabe rotisserie chicken!

Place 4-6 boneless skinless chicken breasts in a crock pot. Add chicken stock until 1 inch deep. Season with salt & pepper to taste. Mince 6-10 cloves of garlic {depending on your garlic palate} and toss on top of the chicken. Cook 4 hours on high or 8 hours on low. Chicken is finished when cooked through and no longer pink in the middle. {Please check with a meat thermometer if you are unsure.}

Shred with two forks and use in place of rotisserie! It's so good you're going to be eating is straight from the pot...just like yours truly ;)

    Great photographs too! It looks so delicious (and I know how hard it can be to take appealing pics of food still in the crockpot).

  3. Stupid question, but when you say add stock until one inch deep do you mean one inch of stock in the slow cooker or covering the chicken by one inch?

    1. Hi Jessica! You can pour enough stock into the crock pot to measure an inch (if you dunk your finger in there and it goes up to the first knuckle) then add the chicken. Basically, the crock pot steams the chicken, keeping it moist, and infuses it with the garlic flavor! You can add onions too if you like that flavor as well :) Best of luck!
