What is one to do with one lonely little zucchini in the refrigerator? Especially when said zucchini is starting to wilt just the tiniest bit? While the other two zucchinis made it on and off the grill before this happened,
this little leftover guy is getting made over into Zucchini & Chocolate Chip Muffins with Streusel Topping. Lucky for him!
You will need {for 24 muffins}:
4 cups unbleached flour {I used 3 1/2 cups white, 1/2 cup wheat}
1 cup sugar {I used turbinado sugar}
6 tsp baking powder
1 tsp salt {I used kosher salt}
1 1/2 cups milk {I used 2%}
2/3 cup canola oil
2 eggs, beaten
1 medium zucchini, peeled and shredded using a box grater
1/2 cup chocolate chips
Streusel:
4 tbsp brown sugar
2 tbsp butter
1 tsp cinnamon
1/2 cup chopped nuts {I had pecans in the freezer}
Preheat oven to 400 degrees. In a Kitchen Aid mixer, add milk, oil, and eggs. Blend until mixed thoroughly. In a separate bowl, add flour, sugar, baking powder, and salt. Use a whisk to mix the dry ingredients together. With the mixer on low, add large spoonfuls of the dry mixture to the mixer, one at a time, until the batter is just combined. Add the zucchini {with any liquid remaining} and chocolate chips and stir again until just combined.
Place your baking cups in the muffin tins. I always spray mine with PAM so the muffin comes out easily. Fill each 2/3 full with batter. To make the streusel topping, combine 4 tbsp brown sugar, 2 tbsp butter, 1 tsp cinnamon, and 1/2 cup chopped nuts in a bowl. Sprinkle a little on the tops of each muffin.
Bake for 20-25 minutes or until lightly browned on the edges. Serve immediately while warm {with a pad of butter if you are feeling naughty} or cool them and store in an airtight container for later :) This is a SUPER moist muffin because that sad sad zucchini lent all of it's moisture and glory to it! Chocolate chips give it a sweetness and the streusel provides the necessary crunch. And since it makes 24 muffins, this is a perfect recipe to share with a neighbor, friend, or bake sale!

ReplyDeleteI tried this recipe today. Good, but way too much baking powder. I put in 6 tsp. because I trusted the recipe but in the back of my head, it sounded excessive. They turned out too airy, not dense enough. Good recipe but cut down the baking powder next time and they should turn out perfect.
