I felt a little bad for my husband as he walked out the door today with two peanut butter and jellies {which he made himself}, as I sat down for lunch and made this wrap for myself. Now...don't feel too bad for him. I did offer him the leftover BBQ pork first.
When I think of BBQ chicken, I think of two things: BBQ chicken sandwiches topped with coleslaw {see this post} and BBQ chicken pizza. Two of my FAVORITES! I bought a new brown rice tortilla to try at home and when I saw the pork, this yummy concoction came to mind.
You will need:

One large tortilla - use any kind you like
Baby romaine or other leafy green
BBQ pork OR chicken {see this post for pork recipe}
Feta cheese
Red Onion, sliced {I forgot to add, whoops!}
Greek style feta dressing
Take your tortilla and lie it flat. Put leafy green across the middle. Top with BBQ chicken. Top with crumbled feta cheese. Top with cilantro leaves. Drizzle with Greek style feta dressing.
Come in for a closer look...
Now it's time to roll it up. First, fold the bottom flap up over half of the fillings. Fold both sides in and then roll the wrap forward until it lies flat {think how Chipolte does it}. I used bamboo skewers to hold it in place as I sliced it in half on the bias.
After one bite, I knew that I had forgotten something important! RED ONIONS! Also a staple on most BBQ chicken pizza's, but instead of in my wrap, it's in my fridge! What a bummer! At least I've warned you so you won't forget!
But as I ate it...it was still a culinary masterpiece of a lunch :)
