Graham Cracker Chocolate Chip Muffins



My kids and I have made muffins thousands of times in thousands of ways with a very basic muffin recipe I scribbled down years ago from a Betty Crocker cookbook at a home I was nannying in. {that...was a mouthful!}

But, I think we hit the mark with this new creation!

Leftover graham cracker crumbs from a chocolate chip dough cheesecake {post coming soon!} were literally falling on my feet every time I opened the pantry. Like they were BEGGING to be used! So I scooped them up with the leftover chocolate chips from the monster cookie dough dip recipe I had made from Pinterest. {Check out her link - her stuff is GOOD!}

You will need:

2 cups flour
3 tsp baking powder
1/2 tsp kosher salt
1/4 cup sugar
1 cup crushed graham crackers {plus more for topping, see below}
***not to powder, but some small chunks can remain
1/2 cup chocolate chips
1 tsp cinnamon {plus more for topping, see below}
1 cup 2% milk
1/3 cup canola oil
1 egg {room temperature is best}, beaten
1 tsp vanilla

For the topping:
2 tbsp brown sugar
1 tbsp melted butter
1/4 cup graham cracker crumbs
1/2 tsp cinnamon

Preheat oven to 400 degrees.

Combine dry ingredients in a bowl - flour, baking powder, kosher salt, sugar, 1 cup graham cracker crumbs, chocolate chips, and 1 tsp cinnamon. Set aside.

In another bowl, combine wet ingredients - milk, canola oil, egg, and 1 tsp vanilla.

Add the wet ingredients to the dry ingredients and stir until JUST moistened.






Make the topping by melting 1 tbsp butter in a microwave safe bowl for about 25 seconds. Add the brown sugar, 1/2 tsp cinnamon, and 1/4 cup graham cracker crumbs. Stir to combine.






Line a 12-cup muffin tin with baking cups or spary with PAM cooking spray. Fill each cup NO MORE than 2/3 full and then sprinkle topping on each muffin.






Bake 18-22 minutes until muffins start to brown. Remove from oven and allow to cool for 5 minutes. Serve immediately or cool and then store in an airtight container.








I ALMOST FORGOT!!!  I bought something new I've been dying to try - Trader Joe's Sugar, Chocolate, and Coffee Bean Grinder. A perfect topping to a delicious muffin!

  5. These look sooo good. Wonder if I could throw in some mini-marshmallows to turn them into a s'mores type muffin? May have to give it a try...
