Cookie Within a Cookie



So I've got another place to be with dessert in hand. Tonight. All I have is one afternoon and two boys who do NOT want to leave the house {which I'm not sure why, it's unseasonably warm outside!}

So I went to a trusty recipe, Cookies, Quick! Seriously, nobody can believe that these cookies only have 5 ingredients! But I usually always have them on hand: peanut butter, brown sugar, baking soda, one egg, and chocolate chips!

Well, no chocolate chips, but I did have a jar of mini chocolate chip cookies in the freezer. Hmm...why not smoosh them into the tops of the peanut butter cookies - DONE!

{Recipe adapted from Everyday with Rachel Ray magazine}
You will need:

1 cup peanut butter
1 cup brown sugar
1 tsp baking soda
1 egg
mini cookies - any variety {from your freezer like me} from the grocery store will do

Preheat oven to 350 degrees.

Put all four ingredients into a stand mixer and combine on medium speed. If the ingredients seem too wet, just increase your speed until the dough starts to pull away from the bowl and clumps up.






Roll 1 tbsp of dough into a ball, and GENTLY press the mini chocolate chip cookie into the center.

Bake for 10 minutes. THAT'S IT!




Allow to cool for 5 minutes on the pan and then transfer to a baking rack to cool completely. Store in an airtight container. It makes about 16-22 cookies {I know, random number}
